A made up recipe which worked quite well as a 'healthy' dessert option, served with mini meringues. It was very tasty on toast the next day, too!

Let's Begin! - Lemon Meringue Tartlets

Lemon meringue pie has always been one of my favourites, so I though I'd make some mini versions as an alternative to mince pies this Christmas. I think they turned out pretty well (although I would have perhaps wanted a crunchier topping).
